Reuben Casserole

16 ounces sauerkraut -- rinsed, well drained
4 ounces sliced lean corned beef - (to 6 oz) -- diced
4 slices Swiss cheese - (to 6 slices) -- shredded
1/2 cup Thousand Island Dressing, low-fat or fat free

In slow cooker, combine sauerkraut, corned beef, and Swiss cheese. Blend in Thousand Island dressing. Cover and cook on LOW for 6 to 8 hours.

This recipe yields 3 to 4 servings.
