Potato Casserole

6 md Potatoes, cooked, peeled and diced
3/4 c Butter, melted and divided
2 oz Jar chopped pimientos, drained
1/2 c Chopped green pepper
1 c Evaporated milk
1 1/2 ts Salt
1/4 ts Pepper
3/4 c Shredded cheddar cheese
24 Saltine crackers, crushed


In a large bowl, combine potatoes, 1/2 cup butter, pimientos, green pepper, milk, salt, pepper and cheese. Mix thoroughly. Transfer to a greased 13"x9"x2" baking dish. Sprinkle with crackers. Drizzle with remaining butter. Bake at 350 degrees F for 45 minutes.
