Carrot Casserole

2 c Carrots; mashed cooked
2 tb Low-fat process American cheese (1/2 oz)
1 Egg;
1/2 c Skim milk;
1/2 ts Salt;
1/8 ts Pepper;
Vegetables cooking spray;


Combine all ingredients, except cooking spray; stir well. Pour mixture into a 1 1/2 casserole dish coated with cooking spray. Bake at 325F for 40 minutes or until thoroughtly heated.
