Eggplant Casserole

1 Eggplant, cubed, unpeeled (approx. 3 cups)
3 oz Grated American cheese (low-fat)
Salt and pepper to taste
1 tb Margarine recommended
1/3 c Water


Stir together eggplant and cheese. Add salt, pepper, margarine and water. Mix well. Place mixture in casserole and bake at 350 degrees for 35-45 minutes in oven. Serves 3-4.
