Golden Potato Casserole

5 lg Potatoes
3/4 c Chopped onion
1/3 c Melted butter
1 sm Can of evaporated milk
2 Eggs
1 ts Salt
1/4 ts Pepper
1 c Shredded cheddar cheese


Pare potatoes and place in cold water to cover. Saute onion in butter till tender. Add milk and bring to a boil and remove from heat. Combine eggs, salt and pepper in bowl and beat till frothy. Shred potatoes on a medium blade. Immediately place in egg mixture to prevent discoloration. Add 1/2 cup of cheese and milk mixture. Bake in a 9x9 inch dish at 350 degrees for 1 hour. Top with remaining cheese and bake for 30 additional minutes.
