Potato Casserole

1 lb Beef, ground
12 Potatoes, peeled and sliced
1 pt Half & half (OR) 1 cn Evaporated milk
1 cn Vegetarian vegetable soup- undiluted


Slice potatoes. Brown ground beef and drain. Mix milk and soup together. Put beef and potatoes in casserole dish (large one). Add milk/soup mixture, stir.

Bake at 350F for about 2 1/2 - 3 hours or until potatoes are tender and milk is mostly absorbed. Check after 2 hours.

You could also put it in two smaller size casserole dishes and cook both at once. You may have to adjust cooking times. Eat one and freeze the other for later.
