Mashed Potato Casserole

10 x Med. potatoes
2 Onions diced
1 c Diced celery, with tops
2 Slices dry bread, cubed
1/2 c Chopped parsley
1 Egg, slightly beaten


Pare and slice potatoes, and boil until tender. Brown onions in butter over medium heat. Add bread cubers and stir till slightly browned. Remove potatoes from heat. Drain and mash till creamy. Gradually add a small amount of milk and continue beating till the consistancy of light batter. Beat in eggs. Fold in onions, bread cubes, celery, parsley and salt to taste. Place mixture in a 2 quaret buttered casserole and heat 20-25 minutes at 350 degrees till lightly browned.
