Eggplant Casserole

1 large or 2 small eggplants
1 tsp. salt
2 whole eggs
2 slices stale bread or equivalent of Saltines
Salt, pepper, Accent to taste
1 small can Oysters, drained


Boil eggplant until tender, mash and add remaining ingredients. Mix all together and top with buttered cracker crumbs to which an equal amount of grated cheese has been added (Cheddar is best). Bake at 350 F until hot through and bubbly.
