Eggplant Casserole

2 eggplants, diced, cooked, drained and mashed
1 lb. Crab Meat
2 eggs, beaten
1 onion
3 shallots
1 1/2 cups bread crumbs
1 lb. mild Cheddar cheese
2 Tbsp. melted butter

Combine eggplant, onions, green pepper;, 1 cup bread crumbs, 1/2 grated cheese and butter. Mix up, then add Crab Meat and 2 eggs.

When all is mixed, put dressing in buttered 9x13 inch dish. Put rest of bread crumbs on top with cheese. Bake 20 to 30 minutes at 400 F.
