Eggplant and Shrimp Casserole

2 Tbsp. onion
1 Tbsp. green pepper
2 Tbsp. celery
1/2 lb. fresh cleaned Shrimp
1 egg
3 Tbsp. milk
1 Tbsp. margarine or butter
Medium eggplant
Bread crumbs


Saute onion, green pepper, celery and Shrimp until onions are soft. Peel and slice eggplant and add to mixture. Cook until eggplant will mash. Cool. Add egg, milk and butter. Mix well. Pour into baking dish and cover with bread crumbs. Bake 20 minutes in 375 degree oven.
