Au Gratin Casserole

1 lb. Shrimp, Crab Meat, or Crawfish Tails
1 stalk celery, chopped fine
1 cup onion, chopped fine
1/4 lb. (1 stick) butter
1/2 cup flour
1 (12 oz.) can evaporated milk
2 egg yolks
Salt and pepper to taste
1/2 lb. Cheddar cheese, grated

Saute celery, onion, bell pepper, and your choice of seafood in butter. Gradually add flour, stirring constantly. Add egg yolks and seasoning. Cook 5 minutes, stirring constantly to prevent sticking. Pour mixture into greased casserole dish and top with grated cheese. Bake at 375 F for 10 to 15 minutes.
