Festive Seafood Casserole

8 oz. package noodles
1 Tbsp. butter or margarine
1/4 cup each of chopped onion, pepper, mushrooms
1 fresh tomato, sliced or canned sliced tomatoes
2 cups seafood, Lobster knuckle meat or Shrimp, Crab Meat, Scallops or canned Tuna
1 Tbsp. lemon juice
1/2 cup mayonnaise
1 small can cream of mushroom soup or 1 cup white sauce
1/2 cup sharp cheddar cheese, shredded
Salt & pepper


Cook noodles and drain. Melt butter in skillet and saute lightly onion, peppers and mushrooms. In a large bowl combine seafood, sauteed vegetables, tomato, mayonnaise, lemon juice, salt and pepper. Add noodles and soup. Pour into buttered 2 quart casserole. Top with cheese. Bake in 400 degree oven for 20 minutes.
