Finnish Salmon Casserole

6 medium potatoes, peeled
1 (16 oz.) can Pink or Red Salmon (skin and bones removed)
1 small onion, chopped fine
1 can cream of chicken soup
2 Tbsp. butter or oleo
Milk to cover potatoes


Slice potatoes thinly. Butter casserole and place layer of potatoes on bottom. Top with some Salmon, onion and soup. Repeat layers until all ingredients are used up. Add enough milk to just cover potatoes. Bake at 350 F for one hour, or until potatoes are tender.


6-8 servings
