Oyster Casserole

1 pint Oysters
6 Tbsp. cream
1/2 cup dry bread crumbs
1 cup crushed saltine crackers
1/2 cup melted butter
Salt, pepper & paprika to taste
Grated sharp cheese, optional


Preheat oven to 400 F. Drain Oysters and reserve liquid. Combine 1/2 cup bread crumbs and saltines. Combine cream and Oyster liquid. Pour butter over crumbs. Arrange in greased casserole alternating layers of crumbs and Oysters. Season with salt, pepper and paprika.


Pour cream and liquid over all. Top with dry bread crumbs, dot with butter and grated cheese. Bake 20 minutes at 400 F. Use more cream if needed.


Serves 6-8
