Scallop Casserole

1 1/2 lbs. bay or Sea Scallops
1 small box Ritz crackers (40)
1 stick butter
1 small container fresh mushrooms, sliced
1 small onion, chopped
1 (16 oz.) package shredded Mozzarella cheese

Crush 1-1 1/2 tubes crackers using a mixing bowl and the bottom of a glass. Saute onion and mushrooms with butter. Blend with cracker mixture. Mix in Scallops. Blend in 2/3's package of Mozzarella. Sprinkle remainder on top. Bake at 375 F in covered casserole dish for 20 minutes to 1/2 hour, until cheese is melted.
