Tuna Cashew Casserole

1/4 lb. cashew nuts
1 medium size can Chinese chow mein noodles
1 can cream of mushroom soup (undiluted)
1/4 cup water
1 small can chunk style Tuna, drained
1 cup finely diced celery
1/4 cup finely minced onion
Dash of salt and pepper
1 tsp. parsley flakes


Use salt only if unsalted cashews have been used. Set aside 1/2 cup noodles. Combine rest of ingredients in a 1 1/2 quart size casserole dish. Sprinkle top with reserved noodles. Bake, uncovered, in 325 degree oven for 40 minutes.


Serves 6.


For a tasty change: Substitute cooked chunks of chicken for Tuna and cream of chicken soup for the mushroom.
