Crawfish Casserole

1/2 cup butter
1 cup chopped onions
1/2 cup chopped bell peppers
1/2 cup chopped green onions
2 lbs. Crawfish Tails
1/2 tsp. black pepper
1 tsp. garlic powder
1/2 tsp. red pepper
Salt to taste
1 cup mushroom stems & pieces
1/4 cup chopped parsley
2 1/2 cups bread crumbs
1 egg, beaten


Saute onions in butter for about 5 minutes. Add bell pepper, green onions and Crawfish Tails and cook for 5 to 10 minutes. Add seasoning, mushrooms and parsley. Remove from heat and add 2 cups bread crumbs and beaten egg. Stir and mix well. Pour into a buttered casserole dish. Top with 1/2 cup of bread crumbs. Bake, uncovered at 300 F for 25 minutes.
