Quick Scallop Casserole

Butter a casserole dish and then saute separate a half pound of sliced mushrooms in 2 tablespoons of butter. In the casserole layer:


1 lb. of Scallops
Salt & pepper
Mushrooms
3/4 lb. of cooked Shrimp


In a saucepan, melt 2 more tablespoons butter and blend in 4 tablespoons flour. Add:


1 tsp. salt
1/2 tsp. sugar
1/4 tsp. pepper


Slowly add a cup of milk and a cup of cream. Cook the sauce until smooth and thickened. Add 1/4 cup of minced parsley and pour over the Scallop mixture. Sprinkle over all a 1/2 cup of grated Swiss cheese. Bake in 400 degree oven for 20 minutes.
