Darby Oyster Casserole

2 pint Oysters
1 1/2 cups finely cut & blanched celery
1 small can pimentos, chopped finely
1 cup grated cheese
2 1/4 cups cracker crumbs
2 1/2 cups milk
3 Tbsp. flour
4 oz. butter
Salt & pepper to taste
1 tsp. sherry


For sauce, melt butter over low heat. Add flour and blend. Stir milk in slowly with a wire whisk until smooth, adding salt, pepper and sherry, then grated cheese, celery and pimento.


Grease 3 quart casserole and layer ingredients as follows:


1 1/4 cups cracker crumbs
Oysters
Sauce


Top with cracker crumbs and bake for 20 minutes in 350 degree oven.


Serves 8
