Chicken Farfel Casserole

1 lg Onion; chopped
3 tb Chicken fat;or oil
1 cn Condensed chicken soup; or 1
1 1/2 c Fresh chicken soup
2 c Sliced carrots
1 c Diced celery
1/2 ts Salt
ds Pepper
2 c Cooked chicken; diced
1 1/2 c Matzoh farfel

Saute onions in fat; cook carrots and celery till soft in water to cover, drain liquid and save. Add vegetable liquid and soup to sauteed onions. Add salt & pepper; mix well. Arrange in layers in 2 quart casserole as follows: 1) chicken 2) vegetables 3) farfel Moisten each layer with soup and onion mixture.

Cover and bake in a 425 oven for at least 30 minutes or until very hot. Uncover and let top brown.
