Lobster Newburg Casserole

White Sauce:

4 Tbsp. butter
4 Tbsp. flour
Dash of salt
1 pint milk

Cook in a double boiler until thick. Add:

1 pint Lobster Meat
1 can cream of mushroom soup
1 cup small bread cubes (about 3 slices with crust removed)
1/2 tsp. cooking sherry

Place in buttered casserole. Top with cracker crumbs mixed with melted butter. Mix tamale with crumbs if desired. Bake at 350 F for 30 minutes; 40 minutes for large casserole. Scallops, fish, Oysters, Crab Meat, or a mixture of any of these may be used.
