Chicken Casserole

1/4 c Onion; diced
1 Chicken; cooked; cubed
16 oz Low or non-fat sour cream
1 lg Canister Stove-top stuffing mix (chicken flavor)
1 cn Cream of chicken soup
1 c Chicken broth, reserved from boiled chicken
1/4 c Butter; melted
1 Egg


Preheat oven to 375 degrees. Boil chicken, cube, reseving 1 cup of the broth. Place chicken in bottom of a 13x9x1-inch pan. Cover with onions. Sprinkle with garlic salt and pepper. Combine sour cream and soup. Beat egg, mix with broth and melted butter.

In a small bowl, combine egg mixture with entire canister of stuffing mixing until just moist. Spread stuffing on top of casserole. Cover with foil. Bake for 30 minutes. Uncover and bake an additional 5 minutes.
