Diet-lovers Potato "cream Cheese" Casserole

3 md Potatoes; cooked & mashed with skim milk
3 1/2 oz Neufchatel cheese
1 Egg; lightly beaten
2 tb Onion; chopped
1 tb Parsley; chopped

Combine mashed potatoes and cheese, beating until well blended. Stir in egg, onion and parsley. Spoon into well-greased 1-quart casserole dish. Sprinkle with paprika. Bake at 400F for 30 minutes or until heated through. Makes 8 servings, about 80 calories each.
