Eggplant Casserole

1 onion
1/4 c. green pepper
5 toes garlic
1/2 tsp. thyme
2 eggplants, cubed
1/2 c. bread crumbs
1 lb. sm. shrimp
Salt and pepper to taste
1/2 stick butter
1 tbsp. olive oil
1 egg
Tony Cachere seasoning to taste
Cayenne pepper to taste


NOTE: Tony Cachere seasoning is salty; watch addition of salt. Chop first 3 ingredients. Add salt and pepper. Saute in oil and butter. Add thyme. Stir. Add eggplant to ingredients and cook until eggplant softens, stirring often. Add bread crumbs and shrimp. Cook about 15 minutes or until shrimp are pink. Beat egg and add to mixture, stirring quickly so egg does not solidify. Place in casserole. Sprinkle bread crumbs over mixture. Bake in 350 degree oven for 25 minutes.
